Halloumi And Grilled Vegetable Sandwich

  • 2 D’Italiano Crustini Hamburger buns 
  •  1 pack, President’s choice Halloumi semi-soft Un-rippened cheese 
  • ½ medium eggplant  
  • 1 red pepper 
  • 1 yellow pepper 
  • 1 ½ cup baby spinach 
  • ½ cup President’s choice Baba ganoush 
  • 3 tbsp olive oil.


Cut halloumi cheese in slices and set aside. Thinly slice peppers and eggplant. Brush 6 eggplant slices with olive oil and grill 2 minutes per side. Sautée peppers and grill halloumi cheese about 2 minutes per side. Warm the hamburger buns on the grill and finally, top each half with baba ganoush, grilled vegetables, halloumi and some spinach.
