Falafel Burgers

What's the best falafel you've ever had?  For me that has to be the ones at a Middle Eastern shop on the east side of Toronto where they make them to perfection. Golden brown on the outside, spiced with cumin, and never dry. I usually have about 2 or 3( actually make that 4 or 5) with tons of spicy hummus, a garlicky tahini sauce and tabouleh. That dish my friends, sums up my idea of heaven. True food for the soul.

A few days ago, falafel cravings were strong so I decided to make my own and because I find weekends are the perfect time to create new dishes, this falafel burger recipe was born. Instantly it became a favourite of both girls, and I know for a fact, that it will be on repeat at home all summer long.

If you have 1 can of chickpeas in your pantry I can almost guarantee you have the rest of the ingredients to make them this week for dinner and because summer is finally here with grilling season in full swing, these falafel burgers are a great way to try something different and get creative with the toppings and spreads on it. I used baba ganoush  to spread on D’Italiano Crustini Hamburger buns, but labneh, tzatziki  or a garlic tahini sauce would be amazing on them too. Come to think of it, that’s one of the things I love the most about a creating a recipe. The fact that you can make it your own by adding what you already have on hand.

Another thing I love about this recipe is that in case you have any falafel patties leftover and want to add them to another meal, let’s say brunch, you can top your patty with a fried or poached egg with some crumbled feta or make this falafel bowl for lunch. If you see that burgers are in your future for a  BBQ next weekend or if you feel like making them for dinner this week, then this recipe is for you! Roast some sweet potatoes to go with it, serve them with a spicy maple sauce and you are set!
